Mayor Joseph Solomon couldn’t resist the temptation Tuesday when he visited A Piece of Cake in Airport Plaza as part of his weekly one-on-one business visits. Brittni Rea, a Johnson & Wales graduate who set out on her own about three years ago, showed off just a few of her creative cupcakes that she said are on par in terms of demand with her cookie dough that comes with a wide selection of toppings. But Solomon, known for his sweet tooth, had already set his heart on a raspberry/cheesecake filled cannoli. “In life sometimes you’ve got to shake it up,” he said when asked about his choice. In addition to a street business, Rea bakes cakes and goodies for special events, often baking and decorating the cake to fit the occasion. She grew up in Warwick, graduating from Pilgrim before furthering her education at J&W. Impressed by her success – not to mention the cannoli – and keen on seeing her business grow, Solomon asked economic and tourism director Karen Jedson if she could help spread the word about A Piece of Cake to area hotels.
